First we ferment sugar cane juice following the French Caribbean AOC rules of Martinique. We begin our fermentation of the virgin sugar cane juice within a few hours of harvest. After about 48 hours fermentation we distill the result. We've rested the 73% ABV spirit for a month in stainless steel

The Silver Snake series of Rhums are our un-aged unwooded fresh agricole Rhum. Most of the Rhum batch is being aged in various old barrels and will be sold in due course as Brown Snake Rhum - named after the Brisbane River.
