First we ferment sugar cane juice following the French Caribbean AOC rules of Martinique. We begin our fermentation of the virgin sugar cane juice within a few hours of harvest from a local sugar mill. After about 48 hours fermentation we distill the result. We've rested the 73% ABV spirit for a month in stainless steel, and finished for 5 months in 40 year old Spanish ex-Pedro Ximenez Barrels. The original 300L barrels have been re-coopered specially for Brisbane Distillery.
This short maturation in our tropical Queensland climate presents a truly Queensland spirit, mature beyond its years.
The fresh, vegetal cane spirit is rounded out by classic sultana & raisin character of Pedro Ximenez Sherry barrels. Christmas cake on the nose, date, toffee & hint of cocoa on the palate. Serve over ice.
